Blueberry Muffins (Baked In A Microwave)



Blueberry Muffins

Ingredients:

4 eggs

500g/ 2 cups white sugar

250ml/ 1 cup vegetable oil

5ml/ 1 tsp vanilla extract

900g/4 cups all purpose flour

5ml/ 1 tsp baking soda

500ml/ 2 cups sour cream

2 cups blueberries


Procedure:

1. Prepare baking cups with paper muffin liners.

2. In a large bowl, beat eggs. Gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir vanilla. In a separate bowl, stir together flour, salt and baking soda.

3. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared microwavable cups. Place the cups inside a tray, cover. Set the microwave for 2-3 minutes.

4. Let cool.

I love blueberry muffins. This is worth a try but I need to buy microwavable cups first. Thanks for sharing.
